Quinoa Salad - Niamh
Ingredients
1 cup quinoa
1 red onion
1 cucumber
Half cup pistachios Half cup fresh parsley Half cup fresh mint
1 can chickpeas 1 pomegranate feta
lime
Method
Cook quinoa as directed on packet.
Dice onion, chop pistachios and cut cucumber into thin rings.
Drain chickpas, chop mint and parsley.
After quinoa has cooled, add it all to bowl and sprinkle feta and pomegranate.
Squeeze the lime juice and a splash or balsamic vinegar over everything.
