Boiled fruit cake (adapted from a Cushendall "women’s institute" recipe) - Kitty & Danny
( lovely cake ...even if fruit sinks as it sometimes does! + keeps very well)
6 oz butter
6oz brown sugarQuarter pint water
3 quarters to 1 lb raisins + sultanas(cranberries) or any such mix
Cherries +/ or mixed peel......optional
8 oz flour
2 eggs
1 T sp baking soda
2 T sp mix of mixed spice,ginger , cinnamon.
Melt butter, sugar, water + fruit mix in saucepan. When sugar dissolved bring to boil for @ 10 min.
Leave to cool. ( can leave at this stage till whenever suits to continue)
Sift flour + spices + (baking soda unless using self raising flour)+ add to fruit mix.
Add beaten eggs + mix all thoroughly.
Bake in loaf tin. 350.* for approx 1 hour. ( check....sometimes needs to turn down temp + continue baking as long as necessary)
Leave in oven to cool.
