Léa’s Pain D’Epices (that’s Honey Bread to you and me!) - O’Connor Family

Ingredients:

250g 50g
1 Tsp.

280g
100g
250ml
1 Tablespoon 1 Heaped Tsp.

Recipe:

Flour
Sugar
Spice (Pain d’epices mix or Cinnamon and/or powdered ginger)

Honey (Dark runny honey is best!) Butter
Milk
Vinegar (White or Apple cider) Baking soda

  • Mix the dry ingredients in a bowl (Flour/Sugar/Spice).

  • In a saucepan, add Honey, Butter and Milk.

  • Gently heat until the butter melts.

  • Add vinegar to the saucepan and stir.

  • Add baking soda and stir (Watch Out, the mix will FOAM! OOH la la!!)

  • Add the foamy ooh la la mix to the dry ingredients and mix.

  • Pour into pre-lined cake tin.

  • Bake at 180C for 30-45 mins or until skewer comes out clean.

  • Leave to cool.

    The honey bread will taste better 1-3 days after baking.
    Add orange peel or candied fruit to jazz it up (I don’t let Léa do this because I can’t stand candied fruit).
