Middle Eastern mashed potato - David & Nicky
Ingredients
Serves 4
1kg potatoes
10g fresh parsley or dill, chopped
1 garlic clove crushed
zest of half lemon
1 tbsp Greek or natural yoghurt 1 tbsp olive oil
1.5 tsp ground cumin
1tsp ground coriander
salt and freshly ground black pepper
Method
Wash and peel the potatoes.
Place them in a large pot with 1 teaspoon of salt and cover with water. Put the potatoes on to boil, covered, then reduce the heat and simmer for 15-20 minutes, just until the potatoes have softened.
Drain off water and leave the potatoes to steam dry in the hot pan, then mash well and add all the other ingredients. Taste as you go, adding more of each if you prefer until these are delicious!
They are great as a light supper with a fried egg on top, drizzled with some hot sauce, crumbled feta cheese and chopped fresh herbs or some cooked kale stirred through.
