Myra’s Cookie Dessert - Dave & Tracy
My mam is no cook but she wowed me with this dessert when I was about 7 and I’ve made it ever since. It was a smart move showing me. It’s so easy a kid can do it and I’m not sure she ever made it again because I always did it. In turn, I showed Andrew when he was 7 and, similarly, I haven’t made it since!
Ingredients:
2 packets of cheap chocolate chip cookies
2 tins of mandarin segments
2 tubs of Whipped Cream
Method:
Pour the juice from the mandarins into a bowl.
Keep the mandarin segments in another bowl.
Spread some cream thinly on a serving plate.
Soak two cookies in the mandarin juice for a few seconds.
Sandwich some cream in between them and place them on their sides on the cream base.
Repeat with another pair and put cream in between this pair and the previous one, a la building a brick wall with mortar.
After you have used one packet of cookies and half of the mandarin juice, lay half of the mandarin segments around the base of the cookie, creamy cylinder of goodness. Place a few on the top too.
Repeat all these steps on another serving plate with the other packet of cookies, juice, mandarins and cream.
Place in the fridge and let chill for a few hours at least but overnight makes them even more delicious. Not sure why.
Cut into 3-cookie segments and serve.
Also, why two of everything? Cos it’s so good you’ll want to eat more than one. Trust me.
