"It's Muhamarah, Jen(ny), but not as we know it" - Amanda

I had this first in London and it blew my mind. I went to make it myself, not remembering what it was called. So, I made it (up) and it's delicious. It's not muharah, though...

"Muhamandy for Jenny" is it's new name.

This makes enough for a dip for a few people

4 x sweet peppers

6 cloves of garlic (or less if you like)

A nice whack of sumac.

Toss some olive oil over the peppers and garlic, sprinkle in sumac (about 2 teaspoons but I never check) rock salt. 

(chili flake or fresh chilli if you like but I prefer it without the spicy spice)

Low and slow in the oven until the garlic is really soft - then add a load of pine nuts to toast or if easier, toast pine nuts on frying pan (no oil) and fling them in. 

CAUTION - they burn like me. Quick and easy.

Lash it all in a blender, add fresh lemon juice (half a lemon) Blend again.

HORSE it into you with your preferred conduit (pitta, crisps, breadstick)
